Maccheroncini Leccesi (al ferretto) are a short pasta shape typical of Southern Italy, with slight variations in shape between Calabria and Puglia. They are characterized by a hollow tube-shaped shape, created by pressing the pasta around a metal rod (the "ferretto") or other similar tool. The dough, made only of semolina and water, is worked and "stretched," leaving a hollow center that holds rich sauces, such as meat-based sauces, well. This typical regional pasta shape, not bronze-drawn, is very unique because it replicates the work of Salento housewives of the past.
