Every year we repeat the same gesture: sending our samples to the lab. Not out of habit, but out of respect. For the land, for those who choose us, and for what we put on our plates.

Chemical analyses from November 2025 once again confirm what is most important to us: no traces of pesticides, plant protection products, or chemical residues . Only Salento wheat, stone-ground, preserved using natural methods—bay and walnut leaves, diatomaceous earth, fresh air—just as it was once done.

The purity of our flour comes from our decision to avoid shortcuts : no synthetic treatments in the fields, no preservatives in the silos, no additives in the processing. Just time, patience, and the scent of wheat.

The result?
A living, clean flour that tells the truth of the land from which it comes.
