Paccheri are a typical pasta shape from Campania, shaped like a large, smooth, hollow tube, reminiscent of macaroni but larger in size. They're nicknamed "slap" (schiaffone) because of the sound they make when dropped onto a plate. Their rough, porous texture, often achieved through bronze-drawing, makes them ideal for a variety of sauces: 1) Rich sauces: Perfect with meat sauces (ragù) and fish. 2) Baked: Excellent for baked dishes, where they can be stuffed or au gratin. 3) Important first courses: Ideal for Sunday lunch or hearty dishes.
